Matzah Balls
6 large eggs
1/2 cup melted schmaltz (chicken fat) or vegetable oil
6 Tbsp. chicken stock or water
3 Tbsp. chopped dill
3/4 tsp. freshly ground pepper
3 Tbsp. plus 1 1/2 tsp. kosher salt
1 1/2 cups Matzo meal

Passover Apple Kugel
4 sheets matzah
3 eggs
1/2 tsp salt
1/2 cup sugar
1/4 cup vegetable oil
1 tsp cinnamon
2 apples peeled, cored,cubed
1/2 cup raisins
